5-Ingredient Holiday Recipe: Hasselback Potatoes with Cheese

For the perfect combination of crispy roast potato chips and soft baked potatoes, look no further than the hasselback potato.

Hasselback potatoes both look and taste great and are the perfect accompaniment to any main. They are also very easy to prepare and come in at just five ingredients (plus salt and pepper).

The cheese and sprinkle of paprika on top give them an added decadence, and touch of festive flare.

This recipe takes about an hour and a half to prepare and yields four servings.

Directions:

  1. Preheat oven to 425 degrees Fahrenheit 
  2. Along each potato, make crosswise cuts every 1/8 to 1/4 inch slicing almost to the bottom to the bottom but not all the way through
  3. Place the potatoes in an 8-inch-square baking dish and coat with cooking spray. Sprinkle with 1/4 teaspoon each salt and pepper.
  4. Bake the potatoes until the cuts begin to separate -- that should take 25 to 30 minutes. Remove from the oven and spray cooking spray into the opened cuts and season into the cuts with the remaining 1/8 teaspoon salt and 1/4 teaspoon pepper. Return to the oven and bake until the potatoes are tender approximately 40 minutes.
  5. Remove from the oven and sprinkle cheese into the cuts (some cuts may not be filled) and season with paprika.
  6. Return to the oven and bake for three to four minutes until the cheese is just melted. Serve topped with thyme.
